Mila, dedicated to all mothers.

On the occasion of Mother’s Day month, we want to present again our Mila, dedicated to the creative flair and innate elegance of the famous fashion designer Mila Schön, mother of Giorgio Schön, owner of Colle Manora.

VINIFICATION

The Mila, Monferrato Bianco Doc, a blend of 65% Chardonnay and 35% Viognier, is produced only in the best vintages, from a selection of grapes from the Tre Querce vineyard. First, the best grapes are hand-picked and softly pressed. The Viognier flower must ferments and ages in steel, while the Chardonnay ferments directly in first-passage french oak barriques, with medium and low toasting. Then, a long “bâtonnage” allows for refinement that enriches the wine during the 12 months of aging, in contact with the noble lees, enlivened from time to time. This permits the development of sweet and multi-faceted aromas. Finally, a resting period in the bottle of at least 12 months completes the personality of this great white wine for meditation, inspired by the extraordinary designer Mila Schön, who left her iconic mark at Colle Manora.

The structured yellow color with golden hints and its brilliant nuances makes room in the glass for an olfactory breadth of rare balance. Notes of ripe exotic fruit, sweet spices, best quality vanilla and a hint of citrus are just some of the sensations experienced, because it is then in letting it breathe in the glass, that we recommend ample, where its bouquet never ceases to amaze. In the mouth it is full and round, recalling some Chablis from Burgundy.                        The taste is long and persistent, rich, and harmonious in its crunchy fragrance.
The combinations that can be obtained are interesting, even if it can very well be the protagonist of a fine dinner with friends. We paired it with steamed cuttlefish roe with thyme mayonnaise to enjoy its incredible cleanliness in its persuasive texture.
